Breakfast till noon. Then we fire up the grill.

Stone-ground grits, gulf shrimp, a little andouille for backbone.
Day-old French bread, custard-soaked, griddled in butter.
However you like them, with toast and a side of grits.
Dressed, on a soft roll, with a side of rémoulade.
Andouille and chicken, the holy trinity, cooked down slow.
Dark roux, simmered since this morning. Cup or bowl.
Monday tradition, andouille, served any day of the week.
Sixteen ounces over an oak fire, with whatever's good that day.
Cast-iron seared, Gulf-caught, dusted in the house blend.
Smothered in a blond roux over rice, the way Marie makes it.
The same pot from this morning, deeper by dinner. Bowl.
Not a tourist trap. A booth, a heavy mug, and a window on the water.
We opened with a cast-iron skillet, a pot of gumbo, and a grandmother's jambalaya recipe. Years on it's the same kitchen, the same booths, and a lot of the same faces at breakfast.
